Tandoori Mayo Paneer Frankie

Tandoori Mayo Paneer Frankie is an easy and a delicious Frankie that will surely be liked by kids as well as elders. I have used tandoori mayonnaise to bring that tandoori taste.

There are 2 steps to making this Frankie and lastly is the assembling part of the Frankie. With this Ingredients, 2 full Frankie's are made.

Lets start with making the paneer mixture for stuffing the roti - Step 1:
Ingredients:
Paneer 200 gms
Tandoori Mayonnaise 1 tbsp
Onion 1 finely chopped
Tomato 1 finely chopped
Green Chili 1 finely chopped
Oil 1 tbsp
Mustard seeds 1 tsp
Cumin Seeds 1 tsp
Asafoetida 1 pinch
Salt as per taste
Freshly Chopped Coriander Leaves

Method:
Cube paneer and keep ready aside.

In a pan heat oil. Once heated, add mustard seeds, cumin seeds and asafoetida. As it crackles, add green chili and onion and saute for a minute.

Now add tomato and saute until tomatoes turn soft and cooked.

Add the cubed paneer and mix once.

Now add salt, tandoori mayonnaise, freshly chopped coriander leaves and mix well. Close the lid and cook for a minute and switch the flame off.

Lets make the roti for Frankie - Step 2:
Ingredients:
Whole Wheat flour / Atta 1 cup
Salt as per taste
Water as required for kneading

Method:
In a bowl take atta, salt and oil and kneading to make a dough using required water. We need a medium soft dough, not too hard, not too soft. keep it aside closed to allow it to rest for 15 minutes.

Now take the dough, knead once and make small balls.

Take one ball of dough, roll it to roti like on the rolling board, with the rolling pin, using needed atta to dust for.

Heat the tawa. Once heated, place the rolled roti and allow it to cook. Flip the roti and cook, drizzle some oil and again flip it to other side and again drizzle little oil. Once done both sides, transfer it to a plate.

Now lets assemble the Frankie...
To Spread / Topping:
Fresh lettuce Leaves
Classic mayonnaise as per needed

Take the roti in a plate. If needed cut the roti half or can use it even as one full roti.

Place the lettuce leaves. For eg. can place one or two leaves as per liking.

Now stuff the paneer mixture made in step 1. Again add the stuffing as per liking, more or less.

Now spread some classic mayonnaise and roll the roti.

Tandoori Mayo Paneer Frankie is ready....
