Eggless Tutti Frutti Cake

Eggless Tutti Frutti Cake is a simple, eggless, delicious and a perfect tea time cake with tutti frutti, giving the cake a special tasty taste.

Ingredients:
Maida 3/4th cup + 2 tbsp
Baking Powder 1/2 tsp
Baking soda 1/4th tsp
Powdered Sugar 1/4th cup
Salt a pinch
Butter 1/4th cup {at room temperature}
Condensed Milk 1/2 cup
Milk 1/4th cup
Vanilla Essence 2 tsp
Tutti Frutti 1/2 cup

For pressure cooker baking:
Salt, to cover the bottom.

Method:
Step 1:                                               
Take a bowl, add powdered sugar and butter and beat well with a hand whisk. 

Once beaten, add condensed milk and whisk well.                   

Step 2:
Take another bowl, Keep a sieve upon the bowl.  

Add 1 cup maida, and baking powder, baking soda and salt and the sieve well into the bowl, until everything is well mixed.

Step 3:




Take tutti frutti in a bowl. Add 2 tbsp of maida and mix and keep ready aside.

Step 4:

Now add the maida mixture {step 2} to the butter mixture{step 1} little by little by fold and cut method, including milk too in between little by little, until everything is mixed and a perfect cake batter consistency is reached. 

Step 5: 

Now add Tutti Frutti and Vanilla essence and give a good whisk. 


Our cake batter is ready. 

Step 6:


Grease a cake pan and transfer the cake batter into the greased pan.

Lets Bake the Cake...
Step 7:
Take the pressure cooker. Add salt on the bottom of the cooker{I call it salt bed}, this is to prevent direct heat to the cake pan. 

Pre-heat the pressure cooker covered for 5 minutes on high flame.

Carefully open the cooker and Place the cake pan into the pressure cooker carefully over the salt bed. The pan should not touch the sides of the cooker.

Close the lid {without the whistle and rubber gasket} and bake on high flame for 5 minutes, and reduce the flame to low and bake for 18 to 20 minutes. It took 25 minutes for my cake to get baked. 

Insert a skewer and if it comes out clean, the cake is ready. 

Take it out of the cooker, and allow to cool for 5 minutes. 

Now take a plate and invert the pan to the plate by tapping it slowly.

Straighten the cake downside to upside.


A soft Moist cake is ready. Enjoy:):)



Important Note on Pressure Cooker Baking:
Before baking the cake using a pressure cooker, please follow the following steps..

Remove the whistle{vent weight}, gasket {rubber ring}. 

Regular use of pressure cooker for baking is not good, as the metal of the pressure cooker may get damaged.
