Vegetable Biryani - for the occasion of jeenaskitchenrecipes.blogspot.in turning 1 ..... 
Yes, on 21st June 2014, my blog was born and I started it with an aim of sharing recipes that I have been learning, making and serving.
Having started  blogging, I have developed lot of interest in cooking,in presentation as well as trying something new many times. I would also like to share that having started blogging, I have made many blogger friends and with their shares I have been learning a lot of things based on cooking, health foods, modern - traditional dishes, presentations, etc..... and also feel a lot appreciated and always want to try to do more better than before, with the comments that I receive from them. I would really Thank them all for their support.

Now lets move on to the recipe. For my blog's one year anniversary I have made Vegetable Biryani, which is just one awesome dish. Actually, it was my Husband's idea to select Biryani for this special day, as Biryani is one such dish that is always been considered as a special dish. It tastes yummmm, is rich and many's favorite dish. The ingredients, methods are quite long, but its worth it.

Ingredients:
For rice preparation:
Basmati Rice, 1 cup
Bay leaf 1
Cloves 2
Cinnamon 1 inch piece
Cardamom 2
Salt as per taste
Water 2 cups
Ghee 1 tsp

For Vegetable part of Preparation:
Onion 1, sliced
Potato 1, cubed
Cauliflower florets, half cup
Carrot 1 small, diced
Paneer 1/4th cup, cubed
French Beans 3, chopped
Peas 1/4th cup
Fresh Mint leaves 1/4th cup
Freshly chopped Coriander leaves
Green Chili 1, slit

Other main ingredients:
Ginger - Garlic paste 1 tbsp
Red Chili Powder 1 tbsp
Turmeric Powder 1 tsp
Bay leaf 1
Cinnamon 1 inch piece
Cardamom 2
Cloves 2 -4
Cumin Seeds 1 tbsp
Curd 1/2 cup + 1/2 cup
Milk 2 tbsp
Saffron /Kesar few strands
Salt as per taste
Ghee 2 - 3 tbsp

Dry Fruits:
Almonds / Badam 2 - 4, chopped
Cashew nuts 5 - 6
Raisins 5 - 6

For Dum - Dough preparation:
Whole Wheat flour 1 cup
Water to make dough
Aluminium foil{food grade}.

Method:
Step 1:
Lets cook the rice.....
Wash rice and drain it. Soak rice in water for 20 minutes.

In a pan heat ghee. Add in Bay leaf, cinnamon, clove and cardamom. Saute once. 

Now add in water and allow to boil. 

Add soaked rice and salt, mix once and cover and cook for 8 to 10 minutes. In between, open and check the rice, and also allow the water to get settled again, as it must be boiling on the top of the pan.

Once rice is done, remove  from heat and close and keep aside to make it get settled. 
{Don't mix the rice too mush, as the rice will break}.

Step 2
Lets prepare the dough for sealing...


In a bowl take atta / whole wheat flour, add salt and oil. Now adding water little by little, make a smooth to medium dough. Close and keep aside.

Step 3
Lets prepare kesar milk...

In a small bowl, add warm milk. To it add few strands of kesar/ saffron and milk. Now add curd to it. Mix well and keep ready aside.

Step 4
Lets start to prepare Biryani's first stage....
In a pan heat ghee. Once heated add Bay leaf, Cinnamon, Cardamom, Cloves and cumin seeds. As it crackles, add onion to it. Saute onion until transparent and done. Now add green chili and ginger - garlic paste and saute till it turns brown. 

Now add the vegetables, starting with carrot, beans, potatoes, cauliflower florets, peas and mix well.

Add turmeric powder, red chili powder and mix well.

Now add curd and mix once. 

Add little {needed} water and little water and cover the pan with lid and cook until the vegetables are done.

Add paneer, almonds, cashew nuts and raisins. Mix well and keep this pan aside.

Lets start preparing the final stage of the Biryani....
Its Layering the Biryani......

For layering the Biryani, we first need a pot or handi. I have got a biryani pot.

Wash the pot and soak in water for an hour before cooking. Drain the water and clean the pot well.

Keep the cooked rice, vegetables, kesar / saffron milk and the dough ready nearby.

Lets start layering...
Transfer the vegetables to the pot. 

Over it, spread one layer of  kesar / saffron milk preparation.

On it add a layer of mint leaves and coriander leaves. 

Now later it with the rice that we have made and kept ready. Layer it properly filling from corners to centre.

Now again layer kesar/saffron milk preparation .

On it layer the second layering of vegetables properly filling it from corner to centre.

Over it layer the remaining rice, spreading it all over the vegetable layer from the corner to the centre.

Our layering is done, Lets ready Dum the Biryani....

For this, we need to seal our biryani pot with aluminum foil.

Over it keep a lid and seal it with the dough we have prepared.

Keep the pot over a tawa, and cook/dum the biryani for 5 minutes on high flame.

Now reduce the flame to medium and cook/dum for another 10 minutes.

Reduce the flame to low and cook/dum for another 7 - 8 minutes. 


Our Biryani is ready.


Serve by taking the first layer and then dig spoon into the pot on one side and serve with Raita.
