Papdi Ringna Nu Shaak

Papdi Ringna Nu Shaak is a Gujarati sabji. Papdi means Flat beans also known as Helda beans is a seasonal vegetable got during the winters. This shaak / sabji is generally made when we get this vegetable. Its easy and serves best accompaniment with roti during lunch. I am making this sabji in pressure cooker. We can make it in pan too.
Papdi 1 cup
Small Brinjals 3, chopped
Tomato 1/2, chopped
Garlic 2 pods, smashed
Green chili - Ginger paste{usually we make this paste and keep it stored in fridge}
Mustard seeds 1 tsp
Turmeric  powder 1 tsp
Red Chili Powder 1 tsp
Salt as per taste
Asafoetida 1 tsp
Oil 1tbsp
Water 1/4th cup
Freshly chopped coriander leaves

Firstly wash papdi. Remove the string from its sides. If needed cut from the centre, and check for any insects :( and continue cutting into squares and keep ready.

Take pressure cooker, add and heat oil. Once heated add mustard seeds. As it splutters add asafoetida. Now add garlic, tomato and saute for a second. Now add brinjal and papdi and mix well.

Now add turmeric powder, red chili powder, green chili - ginger paste, salt and water and mix well. 

Close the cooker and pressure cook for 5 whistles. One cooled, open and transfer to a serving bowl. 

Garnish with chopped coriander leaves.

  1. I just made a dish with avarakkai last week and now I see another. Didn't know that the other name is papdi. Nice dish with those beans.

    1. Yes in Tamil its avarkkai and in Gujarati its called papdi, and Thanks :)

  2. Never combined brinjal and broad beans together, should try soon. Looks like a lovely combination!
